How to use these cheats
Button names refer to the Xbox controller — A, B, X, Y, the LB/RB bumpers, LT/RT triggers and the D-pad. Unless told otherwise, enter codes from the pause or options menu, or while playing. Some cheats disable achievements for that save — keep a separate save before you start.

NCAA Football 2003 on Xbox has one known button code; everything else below is a legitimate in-game exploit or tip.
Custom teams: Press Up, Up, Left, Right, X, B, Y, A, X, X, Y, A to enable custom teams, which can then be rated all the way up to 99.
Easier Dynasty mode: When you create your own team, place the school near strong programmes such as Florida or Texas to attract better recruits.
Infinite creation points: Go to Rosters, choose Edit Player, select the player you want at 99 and raise every attribute. The same trick can pump up an entire squad, though it takes patience.
Announced player names: Go to the options screen, choose Edit Rosters and enter real names under Player Info. From then on the commentators call your players by name instead of by number.
Campus Challenge credits: Create a dominant school, edit the roster so it is full of stars, then schedule as many 1-AA teams as possible in season mode with 15 minute quarters to pile up stats and credits. Playing on Heisman difficulty earns credits faster.
Recover nearly every onside kick: Set the game to easy with penalties off, choose the onside kick and move the kick arrow all the way left and down.
Force fumbles on kickoffs: Keep kicking to the same return man. He will fatigue and start fumbling in the third and fourth quarters.
